This infused recipe puts a contemporary spin on an old favorite that herb enthusiasts will love! A signature feature of this Hasselback Potato Gratin recipe is the blend of herb-infused butter and breadcrumbs crowning the top of flavorful potatoes.
Gratin refers to a casserole-type dish that is sprinkled with cheese and butter-treated breadcrumbs and then broiled or baked. The distinct feature of this recipe is the trademark buttery breadcrumbs infused with medicinal flower. Substitute any ingredients to suit your palate and health goals, like subbing flower-butter for rosemary and garlic.

This gratin goes well with so many main dishes and sides. Pair it with blackened fish, broccoli, and rice or a pork roast and beans. It can even be served with eggs and bacon in the morning if you are looking for new, versatile potato dishes.
Ingredients
1.5-2 pounds of medium Yukon Gold potatoes, unpeeled
Using a sharp knife, make crosswise cuts into the potatoes (1/8-to 1/4-inch apart) almost all the way through the potato but leave the bottom intact so that the slices stay connected at the bottom. Thinner slices have a nice texture and cook more efficiently. Tip: Place chopsticks on either side of the potato to keep from cutting all the way through.
Arrange the potatoes in a 13x9x2-inch baking dish. Fan the slices of the potatoes open slightly. The potato should open like you would open a book or paper fan but do it gently.
Heat the butter in a 3-quart saucepan over medium-low heat. Add the onion and cook for 3 minutes or until tender, stirring occasionally. Add the garlic, flour, and half the rosemary and cook and stir for 1 minute.
Stir in the broth and heat to a boil.
Lower the heat to medium-low and simmer until the broth thickens. Stir in the heavy cream, half the Gouda cheese, and the Parmesan cheese.
Pour the broth mixture over the potatoes, making sure the mixture gets in between the slices. Cover the baking dish.
Bake for 40 minutes. Then uncover the baking dish. Spoon the broth mixture from the bottom of the dish over the potatoes.
Bake for 20 minutes. Sprinkle with the rest of the Gouda cheese and then bake for 5 minutes more. Make sure the potatoes are tender. The cheese should be slightly browned.
Sprinkle with rosemary.
Recipe Note
You can also substitute other cheeses in lieu of the Gouda. Some possibilities include edam, cheddar, fontina, or provolone. Get creative!
