New York cheesecakes are made with heavy cream or sour cream, and this is the ingredient that causes the thicker texture. These two creams produce a slightly tart taste which is also a defining trait of a New York cheesecake.
Either heavy cream or sour cream will produce a more dense, rich texture. Sour cream is made of roughly 20% butterfat. Heavy cream is roughly 25-30% butterfat. Sour cream results in an acidic, tangy flavor while heavy cream tastes a bit sweeter. Sour cream is often used as a replacement for heavy cream. In fact, if you add lemon to heavy cream, it will taste similar to sour cream.
