Native to the Mediterranean, rosemary has been used since as early as 500 B.C. It’s not just a delicious seasoning for soups, casseroles, salads, and stews, but has quite effective medicinal properties. Back in Ancient Greece, scholars would wear rosemary around their necks to help with memory during examinations. Today it’s known for being a good source of iron, vitamins A, C, and B-6, and antioxidant compounds. Rosemary has also been shown to lower blood sugar, improve mood and memory, and support eye and brain health. Learn how to infuse rosemary in olive oil by following the easy recipe below.

This is an excellent herb to infuse into olive oil! the infused oil is great for frying pork and chicken. I also use in salade gressing. I like it to be really strong so I only used 1/2 cup of olive oil.
BTW, I am a certified Aromatherapist and I can say…there is NO linalool in Rosemary. It contains alpha-pinene, 1,8-cineol, camphene, camphor, D-limonene and cymene.

How can I infuse rosemary and remove the linalool in it?

LEVO Oil Infusion, Inc. replied:
Hi there! LĒVO is designed to infuse the natural flavors, aromas, and beneficial compounds from your chosen ingredients — including rosemary — into oils, butters, and more. We don’t have a way to selectively remove specific compounds like linalool from the plant material during infusion. If your goal is to reduce the linalool content, that would require specialized extraction or refinement methods outside the scope of our machine. With LĒVO, you can easily infuse rosemary into your preferred oil by drying it first, then using your chosen temperature and time settings!

I love this machine since I’ve recently learned I can make salves out of infused herbs.
