Infused Carajillo Recipe

Infused Carajillo with orange and vanilla, made with LEVO infused simple syrup.

When you’re home and unwinding, this is the kind of drink that makes coffee feel like a treat instead of a habit. It still tastes like espresso and keeps that familiar depth, but there’s a little more intention behind it. Something you make because you want to enjoy it, not because you need it. That’s what a Carajillo does well. It takes coffee out of autopilot and turns it into something worth lingering over, without turning it into dessert or overcomplicating the process.

What exactly is a Carajillo?

Carajillo comes from Spain, where it began as a simple combination of coffee and alcohol. Traditionally served hot, it was meant to add warmth and ease to a cup of espresso rather than turn it into a cocktail.

The name is widely believed to come from coraje, the Spanish word for courage. Early versions were associated with comfort and steadiness. Coffee provided structure, while a small amount of liqueur softened the drink.

As Carajillo spread beyond Spain, it evolved. Different spirits were used, and over time, Licor 43 became a natural pairing. Its vanilla-forward profile and gentle sweetness complement espresso without overpowering it, preserving the drink’s simplicity while making it smoother and more balanced.

Today, the Carajillo appears in many forms. Hot or cold. Stirred or shaken. The idea remains the same. It sits comfortably between coffee and a cocktail. Familiar, intentional, and easy to return to.

The Perfect Addition: Orange and Vanilla Infused Syrup

A classic Carajillo already has balance, but adding an infused simple syrup allows that balance to feel more deliberate.

Infusing simple syrup with real vanilla bean and fresh orange peel gives the sweetness more dimension. Vanilla smooths out espresso’s sharper edges, while orange peel adds lift without pushing the drink into citrus territory. The espresso stays front and center, but the finish feels rounder and cleaner.

It’s a small adjustment that makes the drink feel considered rather than automatic.
