FAQ

What's the best way to ensure my MCT oil hard candies have a vibrant color?

To achieve brightly colored candies, it's recommended to use gel food coloring. A tiny bit goes a long way, allowing you to achieve the desired vibrancy without affecting the texture or taste of your hard candies.

How can I prevent my hard candies from sticking together after they're made?

After your hard candies have completely cooled, rolling them in icing (confectioner’s) sugar is a great way to prevent sticking. This coating creates a barrier that keeps the candies from clumping together, especially in warmer climates or during storage.

Can I use any type of extract for flavoring my MCT oil hard candies?

For the most robust flavor in your candies, it's suggested to use candy flavoring rather than regular extracts, as the latter might not be potent enough to impart a strong flavor. Candy flavorings are concentrated and designed specifically for hard candies, providing a more intense taste.

What are the key steps I should pay attention to when cooking the candy mixture?

Important steps include heating your mixture of oil, sugar, and corn syrup on low-medium heat until it begins to boil, then removing your spatula and monitoring the temperature closely with a candy thermometer. Avoid stirring after it starts boiling and wait until the mixture reaches 300 degrees Fahrenheit before removing it from heat. This precise temperature control is crucial for achieving the perfect texture for your hard candies.

Does this recipe use 1/4 cup of oil or 1/2 cup

Hi Linda! This recipe calls for 1/2 cup 😀

I make these on a regular basis, as I find this recipe is quicker and easier than using alcohol based tincture.

My process:
1 cup of sugar
1/2 cup of MCT oil (already infused with lecithin)
1/2 syrup

Cook as normal to 300 (I add colour in at the beginning)

Wait for it to get to 285 degrees then add your flavour.

You will see the oil sitting at the top, you need to use a spatula to whisk it all together and it will change to a cloudy colour! After this work quickly to get it into the molds as it hardens quick :)

In my first batch, had the same problem some other people have mentioned where the oil stays as a layer on the top. In my second batch I added 1/4 teaspoon of lecithin and it worked like a charm. would recommend!

How many candies does this make and what size mold was used to get that quantity?

LEVO Oil Infusion, Inc. replied:
Hi David! We used our Gummy & Silicone Candy Molds for this (you can find these here: https://levooil.com/products/gummy-and-candy-molds-set-of-2). One tray makes 32 pieces, so if you get the whole kit – which this recipe utilizes – that’ll be 64 ~3mL pieces you’ll get out of this recipe!

Why every time I use my infused MCT oil does it float above the mixture, I can literally skim it off, the same thing happened with the gummy mixture, what the heck is wrong?
