How To Infuse Honey

I have tried to infuse my dried peppers into honey at 115° for 5 hours and still doesn’t take on any heat. My olive oil came out fantastic. Any suggestions.

Some things to keep in mind for best transfer during infusion are keeping the temp low & slow, your herbs dried (both it seems you’ve got covered!), as well as ensuring your peppers are finely chopped. There can be many factors, including type of pepper & even honey. Can I infuse honey with ground flower and lavender at the same time, or should I infuse with lavender and them with ground flower?

If you are decarbing your flower first, do that without the lavender. Then, you can add the lavender in for the infuse cycle if you choose!

Do you recommend adding lecithin for certain herbs? Curious due to the lack of fat in honey.

Lecithin is a good option for an emulsifier. You can also infuse a fat-soluble liquid such as coconut oil and then add it to your honey!
