Gin Rickey With Honey-Thyme Infused Simple Syrup
We visited Carson Kitchen in Las Vegas to get an inside look at how they use their LĒVO machine to elevate and infuse their cocktails. In this recipe, you'll learn how to make their take on the Gin Rickey using #LEVOmade honey-thyme infused simple syrup.
1/2 cup of water
1/2 cup of honey (adjust to taste)
Thyme (adjust to taste)
1.5 oz of your favorite gin
1.5 oz of lime juice
3/4 oz of #LEVOmade Honey-Thyme infused simple syrup
Optional: Cucumber and thyme to garnish

Directions for the Honey-Thyme Simple Syrup Infusion
Set your LEVO to 105°F-115°F and infuse for 120-240 minutes, depending on your herb choice. Use our time and temperature calculator to be precise, or visit the LEVO Love Club private facebook group for specific suggestions. The low temperature will help preserve the honey's healthy bacteria and prevent your simple syrup from burning.
Once the infusion is complete, dispense into an airtight container and store in a refrigerator.
Directions for the Gin Rickey Cocktail
In a cocktail shaker, add gin, #LEVOmade honey-thyme simple syrup, lime juice, and ice.
Shake your mixture until thoroughly combined.
In a tall glass, add ice and your gin mixture.
Top up with cucumber soda and your cucumber-thyme garnish.
